The guest service fee is 0.5% of their share and tip. It appears as its own line on the bill before paying and goes to Paytabl. Per-restaurant settings can change it.

Payments run on your restaurant's own Stripe account. Card processing is what Stripe charges that account for each payment (2.9% + 30¢ for most US cards); we add nothing to it. It is kept from each payment before it reaches your bank and is not returned on refunds. Guests pay a separate 0.5% service fee on their share and tip, refunded proportionally.
